Veggie Mozzarella Sandwich

This is a sandwhich for my veggie lovers out there, with the 7 different veggie layers this sandwhich has it all! from the crunch of the carrots, to the aromatics of the basil, to the sweetness of the caramelized onions, this sandwich layers up in perfect harmony.

INGREDIENTS

  • Cibatta bun

  • Fresh mozzarella

  • Carmalized onion

  • Carrots

  • Cucumber

  • Spinach

  • Basil

  • Tomato

  • Avocado

  • Garlic aioli (1/4 cup mayo + 1-2 minced garlic cloves)

INSTRUCTIONS

  1. Toast your bun with a bit of olive oil to get some crunch.

  2. Spread a layer of garlic aioli on both sides of your toast.

  3. Layer all of your veggies and cheese to your liking.

  4. Top it off with salt and pepper.

  5. Enjoy!

Want to make it vegan?

Heck yeah you do, just leave off the cheese or even replace it with fresh cashew milk mozarella/ your favorite vegan cheese. Then, just swap your mayo with vegan mayo!
