Orange & Mint Goat Cheese Crostini

Bright, light, refreshing and super easy orange and mint goat cheese crostini.

INGREDIENTS

  • Bread of choice. I like to use whatever fresh bread I am feeling and can find at the time, o whatever you perfer will be fine. My favoirtes are soft and crusty breads.

  • Goat cheese

  • Orange slices

  • Fresh mint

  • Honey

  • Salt

  • Optional olive oil for toasting the bread

INSTRUCTIONS

  1. Preheat oven on high broil.

  2. Slice your bread, I usually perfer mine to be about 1/2 inch thick.

  3. Drizzle each side with olive oil and toast in the oven for a few minutes until brown and crispy. Keep a watchful eye on broil they can burn fast!

  4. Once crispy, take them out and flip each slice over.

  5. Add a dollop of goat cheese and pop it back in the oven for 30 seconds to 1 minute to warm it enough to spread it easily over the toast.

  6. Slice your orange and lay it on goat cheese.

  7. Top it off with some pulled apart fresh mint leaves, a drizzle of honey and some sea salt.
