Baked Lemon Potatoes

Lemon baked potatoes with a creamy center and the perfect amount of pucker. With a quick prep time they are a life saver for a busy meal, just pop them in the oven and bam!

I N G R E D I E N T S

• Thyme

• Oregano

• Salt & pepper

• 5 potatoes

• 1/2 C olive oil

• 1/4-1/3 C lemon juice

• 1.5 C low sodium chicken broth

• 4 garlic cloves minced

I N S T R U C T I O N S

• Preheat the oven to 400° F

• Wash, peel and cut potatoes into ~1x1” cubes

• Combine all ingredients in a dish & mix

• Bake for 1 hour/until fork tender. Flipping them half way through helps them to cook evenly but can sometimes take away a bit of their crunchiness

• Finish with broiling for 5-10 min/ until crispy golden brown and enjoy!

S W I T C H U P

• Sprinkle with crumbled feta to add some creaminess

• Substitute the chicken broth with low sodium veggie broth to make it veg/vegan friendly
