Honey Granola

Light, airy, sweet, but not too sugary and completely customizable. A granola that can do it all.

Yields: ~5 cups


INGREDIENTS

  • 2 cups old fashioned oats

  • 2 cups rice puffs cereal

  • 1/2 cup pepitas (salted)

  • 1/4 cup chia seeds

  • 1/2 cup honey

  • 1/4 cup (1/2 stick) unsalted butter

  • OPTIONAL small pinch of salt IF butter and pepitas are unsalted

INSTRUCTIONS

  1. Preheat your oven to bake 375 F.

  2. In a large microwave safe bowl melt your butter.

  3. Add your honey to the same bowl and stir.

  4. Add the rest of your ingredients to that bowl, oats, puffs, pepitas, and chia seeds.

  5. Stir until everything is well coated.

  6. Place the mixture on a parchment lined baking sheet and press down to get a single even layer (you will likely have to do two batches to not overcrowd the pan).

  7. Bake in the oven for about 15-20 until everything is nice and golden brown (all of the mixture should be completely dried out, no moisture). Take the pan out, mix and re flatten the mixture about every 5 min, this will ensure even browning on all of the granola.

  8. Allow your oats to cool completely and then store them in an airtight container for anywhere from 2-6 months depending on the environment.


Ways to customize this recipe for you.

  1. Add more or less of any ingredient. If you want it to be more light and airy, add more rice puffs. If you want it to be less sweet, add less honey.

  2. Change the choice of nuts and seeds. I chose to use pepitas and chia seeds because they are my personal favorites, but you can add any kind (and however much) of nuts of seeds you want! Some other choices may be, walnuts, pecans, almonds, flax seeds, sunflower seeds, and more!

  3. Make is chocolaty. Add a tbsp of cocoa powder to step 3 or a cup of your choice of chocolate chips to step 4 (or BOTH). You could even swap out your rice puffs for chocolate rice puffs!

  4. Add dried fruit. Whatever your choice of fruit may be, adding some to this mixture will bring a whole new layer of flavor to the party.
